What Happens When You Add Whiskey to Baileys

Baileys Irish Cream is a liqueur made with Irish whiskey, cream, cocoa, and vanilla. It was launched in 1974 and is sweet, thick, and low in apparent spirit heat. Adding whiskey changes the drink. The cream softens the whiskey’s oak and alcohol, while the whiskey gives the liqueur a drier edge and more aromatic detail. The aim is not to make a stronger Baileys for its own sake. It is to find a ratio where the whiskey is present but the cream still tastes like cream.

Which Whiskey to Use

Irish whiskey

Irish whiskey is the most direct match because Baileys already contains it. A smooth blended Irish whiskey such as Jameson or Bushmills adds malt and light fruit without fighting the cream. Redbreast, a single pot still Irish whiskey, brings more spice and body. Start with 2 parts Baileys to 1 part Irish whiskey over ice.

Bourbon

Bourbon’s vanilla, caramel, and oak notes line up with Baileys’ cocoa and vanilla. Maker’s Mark or Buffalo Trace are useful benchmarks. The whiskey’s corn sweetness can make the drink richer, so keep the whiskey to 1 part against 2 parts Baileys at first. A high-proof bourbon needs less.

Scotch whisky

A Speyside or Highland single malt with honey, orchard fruit, or sherry cask notes can work well. Avoid heavily peated Islay whisky unless you want smoke to dominate. Use 1 part Scotch to 2 or even 3 parts Baileys, depending on the malt’s strength.

Rye whiskey

Rye’s pepper and spice cut through the cream more sharply than bourbon does. That makes it a good choice when the drink tastes too sweet. Use a straight rye whiskey and begin at 2 parts Baileys to 1 part rye.

Ratios and Serving

The standard starting point is 2 parts Baileys to 1 part whiskey, stirred or shaken with ice and strained over fresh ice. For a stronger drink, move to 1 to 1. For a lighter after-dinner drink, use 3 parts Baileys to 1 part whiskey. Serve it cold. Baileys contains dairy, so do not leave a mixed drink sitting out.

Neat, use a small rocks glass and no ice. The drink is dense, so a 2-ounce pour is enough. For coffee, brew strong coffee, add 1 ounce Baileys and 1/2 ounce whiskey, then top with lightly whipped cream. For a frozen version, blend 2 ounces Baileys, 1 ounce whiskey, 1 cup ice, and a splash of cold coffee until smooth.

Three Cocktails to Try

  • Baileys Old Fashioned: Muddle 1 sugar cube with 2 dashes Angostura bitters in a rocks glass. Add 2 ounces bourbon or rye and 1/2 ounce Baileys. Stir with ice, then garnish with an orange peel.
  • Creamy Manhattan: Stir 2 ounces rye whiskey, 1 ounce sweet vermouth, and 1/2 ounce Baileys with ice. Strain into a chilled coupe and garnish with a cherry.
  • Espresso Martini variation: Shake 1 ounce vodka, 1/2 ounce coffee liqueur, 1 ounce fresh espresso, and 1/2 ounce Baileys with ice. Strain into a chilled glass and garnish with coffee beans. For more whiskey flavor, add 1/4 ounce Irish whiskey.

What to Avoid

Do not use a whiskey you dislike neat and expect cream to fix it. The cream rounds off edges, but it does not hide harsh spirit. Also avoid adding lemon or other acidic juice, which can curdle the dairy. Keep the drink cold and use fresh ice.
